Drop Dead Mockjito

This month we are doing a mocktail that the whole family can enjoy! In honor of the book, Everyone In This Room Will Someday Be Dead I picked a blood looking cocktail. I also chose a mocktail (in this case a mock blueberry mojito) since the main characters brother is struggling with alcoholism. I thought this may be an appropriate time to choose something that speaks to that and will be delightful to all our readers, even if they don't drink alcohol.
Both Susan and I enjoyed this drink, although Susan found the original recipe a little heavy on the lime side. So, I changed the recipe here to reflect less lime. We both found it refreshing and Susan liked that she could make it for the kids. I enjoyed that it wasn't too sweet and that the sweetener was honey, adding a nice flavor. Recipe
1 cup of blueberries (fresh or frozen)
2 tbsp honey
1 tbsp water
1 oz lime juice
1 sprig of mint
Club soda
Blueberries for garnish
Combine blueberries, honey and water in a saucepan. Bring to a boil then reduce heat and simmer for 5 minutes. Mash the blueberries and set aside to cool. Once cooled add 2 tbsp of the blueberry mix, lime juice and mint to a shaker. Muddle. Strain into a rocks glass. Top with club soda and garnish with blueberries.
