Mexican Blues Margarita

Our Cover to Cocktails drink for April is the Mexican Blues Margarita, inspired by the book American Dirt by Jeanine Cummins. This novel takes place primarily in Mexico, telling the heartbreaking story of a mother and son who are fleeing for their lives after having their whole family killed by the cartel. The tragedy of the story made it hard for me to choose a cocktail, because how do you turn that kind of situation into a drink. I chose a margarita as it is a cocktail so many people associate with Mexico, but added the blue curacao. To me this could symbolize the remembered blue waters of Acapulco where the main character is from but also the heartbreak she is going through.
Susan and I both loved this cocktail! Susan figures it will be their summer drink this year. It was one of our easiest cocktails to make and even easier to drink (which is why I had three of them the night we chatted about our book and cocktail). The blue curacao perfectly balances out the lime in this drink to make is a wonderful margarita with a beautiful look. I like only salting half of the rim so that the salt isn't overpowering with every sip. You can choose how much and if you want salt with each taste. Using the fresh lime juice with the limeade makes sure to give it that traditional margarita feel without being too sweet. We hope you enjoy it as much as we did. Recipe
1 oz tequila
1 oz Blue Curacao
.5 oz fresh squeezed lime juice
Limeade juice (see note below)
Salt
Lime Slice
Use your lime slice to wet the rim of a rock glass and then salt only half of it. Add ice. Add tequila, blue curacao, and fresh lime juice. Top with prepared limeade juice. Stir, garnish with lime slice and enjoy!
Note: You can find fresh limeade juice in the refrigerated section of the grocery store with the orange juices. If you can't find fresh you can find frozen concentrate in the freezer section. Prepare this according to the instructions and then use as you would fresh limeade.
