Happy February everyone! This month we are brining you a sea drink to brighten up your palate. Inspired by the cottage named Sea Glass in this month's book, Daisy Darker, this cocktail uses a rimmer and egg whites to bring you the foamy, saltiness of the sea. Blue Curacao adds a beautiful ocean hue as well. Using a technique that we learned in season one with a drink called I Spy Borscht, we do a reverse shake to cool the drink without having the ice in our shaker destroy our foam. However, it did get very foamy especially when adding the soda. If it's a bit too foamy, let it sit for a few minutes before drinking or scoop some of the foam off the top. You can also make a double cocktail and share it with a friend to split the foam between two drinks.
We both loved this drink! The color was beautiful and with the foam and salt it had a delicious ocean feel. Susan's daughter even loved the look of the color and foam (Susan was going to try and find a non-alcoholic alternative for). The flavors all blended perfectly for a very smooth cocktail. The orange and lime flavors were enhanced by the salt and there was only a mild sweetness from the soda, for those who don't like anything too sweet. Susan isn't much of a gin fan but said that it worked well here. We really hope you enjoy this one as much as we did! Until next time have a drink, read a book and be happy!

Sea Glass
1 oz Blue Curacao
1 oz Gin
1/2 oz Lemon Juice (fresh squeezed)
1 Egg White
Salt
Lemon Lime soda (Sprite or 7up)
Lemon Wedge
Combine the first 4 ingredients in a shaker with ice and shake for about 20 seconds. Strain into a rocks glass. Remove ice from the shaker, add the mixed drink back into the shaker and dry shake for 30 seconds. Salt the rim of the glass (using your lemon wedge to wet the rim) and then pour the cocktail back in. Top with Sprite. Garnish with lemon wedge.
