Happy New Year Cover to Cocktails fans! We hope you are having an amazing 2025. We're starting off this year with a cocktail that will have you dreaming of a tropical vacation, just like the main character in this month's book A Nearly Normal Family who dreams of a trip to Thailand. I wanted to mix some beach vacation flavors and create a fun sea blue cocktail. Well, I got the flavors right but I ended up with an unexpected color when mixing the grapefruit with the blue curacao. But the blue crystal rim and little umbrella will hopefully make you feel like you're on a beach.


Despite the funky gray color the taste was fantastic. Full disclosure this cocktail was not only inspired by the book but also by a drink I made up for my husband when trying to use up some grapefruit juice in the fridge. I thought that the coconut rum would be overpowered by the grapefruit juice, but instead it was a great pairing. Susan usually doesn't like grapefruit juice, but she even really liked it. The sugared rim adds a little sweetness to also balance the grapefruit while the bitters and blue curacao add some depth of flavor. We hope you will enjoy this as much as we did. Recipe

1oz coconut rum

.5 oz blue Curacao 

2 dashes of bitters

Ruby Red grapefruit juice

Sugar

Little umbrella


Dampen the rim of a rocks glass with blue curacao and then rim with sugar. Add some ice.  Add the rum, blue Curacao and bitters. Top off with grapefruit juice and stir. Add your little umbrella and enjoy!
