The April cover to cocktails book is The Last Thing He Told Me by Laura Dave. In the book they spend a lot of time in Austin, Texas. So, I thought I would see if Austin or Texas had a signature drink that was developed there. That's when I came across a cocktail that I had never heard of before, but is supposed to be very popular in Texas, The Paloma. It sounded similar to a margarita on the rocks but a little more tart with the use of grapefruit soda. It also calls for tequila, a liquor we hadn't used yet for Cover to Cocktails (to be honest I'm not sure how we got through the last year without using tequila!).



Susan and I both loved this drink. In fact, Susan said that it is probably her favorite drink that we have made thus far! With the tequila, salted rim and grapefruit/lime combination for mix, this cocktail is like doing a shot of tequila with every sip. It is a drink we both felt that we could have many times over (and have since making it). We hope you enjoy it and don't forget to have a drink, read a book and be happy!

Recipe

1.5 oz tequila

.5 oz fresh squeezed lime juice

grapefruit soda (fresca or squirt)

salt


Rub lime wedge around the edge of a rocks glass and rim with salt. Add the tequila and lime juice and then fill with ice. Top with grapefruit juice and stir. Garnish with lime slice.
