This month we review the book Humankind, a non-fiction that advocates the decency of most people. When thinking of moments of kindness in my life, one of my first thoughts went back to girl guides and the yearly visits to the Club 55 where we would hang out and serve strawberry shortcake to all of the folks at the club. Inspired by this, I tried to create a drink that encompassed the flavors of this wonderful dessert.
Susan and I both really loved this cocktail! The strawberry simple syrup is amazing and can be used in other drinks (I used it in a strawberry mojito). It blends great with the Strawberries and Cream Baileys. The added vanilla vodka and crumb rimmer give the cake feel. The Baileys does give a boozy punch. If you aren't a fan of Baileys I would try Baha Rosa, a strawberry tequila. Enjoy and don't forget to have a drink, read a book and be happy!

Recipe
1.5 oz Strawberries and Cream Baileys
1.5 oz Vanilla Vodka
1 oz Strawberry Simple Syrup (see recipe below)
1 oz Heavy Whipping Cream
Graham Cracker Crumbs

In two separate shallow dishes add a little vanilla vodka and graham cracker crumbs. Dip the edge of your martini glass in the vanilla vodka and then in the graham cracker crumbs. In a shaker with ice add the Baileys, vodka, simple syrup and whipping cream. Shake for 30 seconds and then strain into your martini glass. Slice your strawberry and cut a small slit in it. Add it to the edge of your glass.
Strawberry Simple Syrup
Add 1 cup of sugar to 1 cup of water in a small sauce pan. Heat on low until the sugar is dissolve and the liquid is clear (about 5 minutes). Take off of the heat and add 1 cup of chopped strawberries. Let site for about 4 hours and then strain it into a container. Store in the fridge for up to one week.
